Lupin & Vegetable Dhal

Prep time 15 mins. Cook time 40mins   Serves 6 (GF) (Vegan)


  • 100g Lupin flake
  • 2 carrots diced
  • 2 celery sticks diced
  • 2 medium onions finely chopped
  • 4 cloves garlic crushed
  • 1 (420g) can whole peeled diced tomatoes
  • 2tbsp Oil
  • 4tsp black mustard seed
  • 1tbsp fresh grated ginger
  • 1tsp chilli powder
  • 2tsp Tumeric
  • 3tsp Ground Coriander powder
  • 2tsp Ground Cumin powder
  • 6 cups vegetable stock
  • 1 tin coconut milk
  • 2tbsp fresh coriander leaves           



Heat oil, cook mustard seeds, stirring until they start to pop. Add onions, garlic and ginger. Cook until onions start to brown, stirring constantly.

Add ground spices, cook stirring for 1 minute. Add lupin flakes, carrots and celery and sauté for another minute stirring constantly, then add crushed tomatoes and stock. Simmer until vegetables are tender.

Add remaining ingredients and stir until heated through.

May be served with a drizzle of coconut milk and a sprinkle of coriander leaves.
