Lupin Vegan Chocolate Cake

Ingredients

  • ½ cup lupin flake
  • ¾ cup self raising flour
  • ¼ cup almond meal
  • 1 cup sugar (fine)
  • 3 tbsp cocoa powder
  • ¼ tsp baking powder
  • ¼ tsp bicarb soda
  • ½ tsp salt
  • ½ cup oil (of choice)
  • 1 tsp vanilla essence
  • 1 cup cold water
  • 1½ tsp white vinegar

Method

  • Preheat oven to 170’c and line a 13cm x 27cm loaf tin with parchment paper.
  • Add all dry ingredients into a bowl and mix through to ensure well blended.
  • Put all wet ingredients into a jug and whisk well. Add the wet ingredients to the dry mix and mix until just blended.
  • Pour batter into the lined loaf tin and bake for approximately 40 mins.
