Lupin & Chia Pudding with Coconut & Kiwi
Prep time: 90mins (chill time) Serves 4 (GF) (V)
- 40g lupin flake (4 tbsp)
- 45g chia (3 tbsp)
- 500ml coconut milk
- 2 tbsp shredded coconut
- 4 tbsp golden syrup
- 1 tsp vanilla essence
- 2 kiwi fruit (peeled & chopped)
MethodPlace all ingredients – except the kiwi fruit - into a saucepan and bring to a boil.
Turn down heat and simmer gently whilst stirring for approximately 5 minutes.
Set aside and let cool (in refrigerator) for at least an hour to set. Preferably overnight.
To serve, place pudding in each glass layered with chopped kiwi fruit. Drizzle with extra golden syrup as desired.
Note: serving suggestion, add a dollop of coconut yoghurt on the top layer with the kiwi and extra syrup.
